Ingredients

  • 6 - Potatoes (boiled, peeled and cut)
  • Tomato paste - 2 tsp
  • Hing - 3 pinch
  • Coriander - 2 tsp
  • Lal mirch (paprika) powder - 3 tsp
  • Haldi - 1 pinch
  • Ginger-garlic paste - 3 tsp
  • Cumin seeds - 1 tsp
  • Cumin powder - 1/2 tsp
  • Cooking oil - 2 tsp
  • Salt to taste
  • How to Make Alighari Aloo Potato:

    1. Heat oil in a pan.
    2. When hot, splutter jeera seeds in it.
    3. Reduce the heat to medium and add coriander, turmeric and paprika powder.
    4. Stir for 2 minutes. Add asafoetida powder and after a minute add ginger-garlic paste and cumin powder.
    5. Stir for another 4 minutes. Add potatoes and tomato paste to the pan.
    6. After stirring and mixing together for 2 minutes, add 1/2 cup water and salt to taste.
    7. Keep it simmering on the pan for 5 minutes.
    8. Turn off the heat and garnish with coriander leaves (optional) before serving.
