  • 1 - carrot
  • 1 - potato
  • 1 - chow chow
  • 1 - capsicum
  • Salt to taste|
  • 100 gm - beans
  • 1/4 cup - cucumber channa dal
  • For Grinding:
  • 3 tbsp - coconut
  • 1 - red chilli
  • 1/2 tsp - cumin seeds
  • For Seasoning:
  • 1 tsp - oil|
  • 1 tsp - mustard seeds
  • Curry leaves a few

How to Make All India Kootu

  • Pressure cook channa dal and mash it well and keep it aside
  • Soak 1 tsp of rice in water
  • Finely chop all the vegetables and put it in a bowl
  • Heat a heavy bottomed pan and cook the chopped vegetables with required water for the vegetables.
  • To this add turmeric and salt and mix it well
  • Grind the coconut, red chilli, cumin seeds and soaked rice to a fine paste
  • When the vegetables are cooked, drain the excess water and add the ground paste and stir well
  • Add the cooked channa dal and mix it well. Add required water to get the required consistency
  • In a separate pan, heat oil, splutter mustard seeds, add the curry leaves
  • Add the seasoned ingredients to the boiling kootu and switch off the flame.
