How to Make Aloo Baingan

  • Cut the potatoes and brinjal into thin slices
  • Slice the onions thinly.
  • Heat the oil in a kadai. Add mustard and cumin.
  • When they splutter, add onion and fry till light brown.
  • Mix all the powders with a little water to make a paste.
  • Add them to the kadai and fry for one minute.
  • Add brinjals and sprinkle salt and sugar lightly over them.
  • Fry for a minute and then keep them covered on low heat till they are tender.
  • Add potatoes and salt.
  • Add mango powder and sugar.
  • Mix well and leave it covered on low heat for 2-3 minutes.
  • Serve hot with chapattis or steamed rice and dal.
