Ingredients

  • 250g - Potato
  • 250g - Brinjal
  • 250g - Onion
  • 3 tbsp - oil
  • 1 tsp - mustard
  • 1 tsp - Cumin seeds
  • 1 tsp - chilli powder
  • 1/2 tsp - Turmeric powder
  • 1 tsp - coriander powder
  • 1/2 tsp - Garam Masala powder
  • 1 tsp - dry Mango powder
  • 1 tsp - Sugar
  • How to Make Aloo Baingan:

    1. Cut the potatoes and brinjal into thin slices
    2. Slice the onions thinly.
    3. Heat the oil in a kadai. Add mustard and cumin.
    4. When they splutter, add onion and fry till light brown.
    5. Mix all the powders with a little water to make a paste.
    6. Add them to the kadai and fry for one minute.
    7. Add brinjals and sprinkle salt and sugar lightly over them.
    8. Fry for a minute and then keep them covered on low heat till they are tender.
    9. Add potatoes and salt.
    10. Add mango powder and sugar.
    11. Mix well and leave it covered on low heat for 2-3 minutes.
    12. Serve hot with chapattis or steamed rice and dal.
