Ingredients

  • 250 gms - Whole wheat flour
  • 250 gms - Plain flour
  • 1/2 cup - Yoghurt
  • 4 tbsp - Oil
  • 1 tsp - Salt
  • For the stuffing:
  • 4 - medium Potatoes, boiled and mashed
  • 1 tsp - Cumin powder
  • 1 tsp - Dry mango powder
  • 1 tsp - Ajwain (carum seeds)
  • 1 tsp - Red chilli powder
  • 1/3 cup - chopped Coriander leaves
  • Salt to taste
  • Oil for frying

How to Make Aloo ki Puri

  • Mix all ingredients for the dough and knead with water to form a pliable dough. Leave to stand for 20 mins.
  • Mix all the ingredients for the stuffing.
  • Divide dough into 10 balls. Stuff the filling and roll into balls again and leave for 20 mins.
  • Roll out gently into 5 inches diameter discs.
  • Deep fry in hot oil till light brown. Once you lower the puris into oil, it will sink and then rise. At that time, swish oil on the top side of the puri.
  • This will enable it to puff up well.
