How to Make Aloo Methi Curry

  • Boil and peel the potatoes.
  • Soak tamarind in 2 cups of water and extract the juice.
  • Heat the oil in a kadai. Add mustard.
  • When it splutters, add onion and fry till light brown.
  • Add methi leaves and fry well.
  • Add the potatoes and fry till they turn light brown.
  • Add all the powders, fry for 1 minute.
  • Add tamarind juice, tomato puree and salt.
  • Simmer till the gravy is slightly thick.
  • Serve hot with steamed rice.
