Ingredients

  • Potatoes (medium sized) - 5
  • Tomatoes (medium sized) - 4
  • Onions - 4
  • Grated Coconut - 1 cup
  • Ginger-Garlic Paste - 1 tbsp
  • Chilli Powder - 1 tbsp
  • Coriander powder - 1 tbsp
  • Turmeric - a pinch
  • Salt to taste
  • Oil - 2 tbsp
  • Milk (boiled) - 1 tbsp
  • Coriander leaves (chopped) - a few
  • How to Make Alu-Tomato Saag:

    1. Chop potatoes into small cubes after removing the skin.
    2. Chop onions and tomatoes into small pieces.
    3. Grind the grated coconut into a smooth paste.
    4. Heat oil in a tava and add the ginger-garlic paste to it.
    5. When the paste turns brown, add the chopped onions.
    6. After the onions are fried, add the chopped potatoes with a pinch of turmeric.
    7. Fry for some time.
    8. When the potatoes become semi-soft, add the chopped tomatoes, chilli powder and salt.
    9. Add a glass of water, close with a lid and leave for a few minutes.
    10. Then add the coconut paste and milk.
    11. Keep checking if the potatoes are cooked. When they are finally done, add the coriander seed powder.
    12. Garnish with chopped coriander leaves.
    13. Serve with hot puris, chapattis, plain rice or pulav.
