Ingredients

  • 1 cup - amarantha greens or palak, finely chopped
  • 1/3 cup - cooked toor dal, mashed
  • 1/2 tsp - chilli powder
  • 1/2 tsp - black pepper powder
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - cumin seed powder
  • 2 tsp - garlic, crushed
  • 2 tsp - jaggery powder
  • 1 tsp - mustard
  • Salt and lime juice to taste
  • a few curry leaves
  • 2 tsp - oil

How to Make Amarantha Greens (Palak Saaru)

  • Mix the greens with all the powders and garlic.
  • Add about 6 cups of water and heat.
  • When it begins to boil, lower the heat and simmer for 10-15 minutes.
  • Stir in the dal, simmer for 2 more minutes.
  • Add salt, jaggery and lime juice. Stir well and remove from heat.
  • Heat the oil and add mustard.
  • When it splutters, add curry leaves and add it to the saaru.
  • Serve hot with steamed rice.
