  • 5 - medium green mangoes (slightly ripened)
  • 400g - jaggery, grated (more as per taste)
  • 1 inch - Cinnamon stick
  • How to Make Ambakalya:

    1. Cut and stone mangoes, making large pieces. Microwave for 2 minutes, to soften them a little.
    2. Do not add water, but cover container.
    3. Heat jaggery in a heavy pan, with 2-3 tbsp water. Cook to melt jaggery.
    4. Add mango slices, cinnamon, cook covered for 8-10 minutes.
    5. Remove lid, cook further for 10 minutes on low, till a medium thick syrup is formed.
