How to Make Amboli

  • Mix all the ingredients and add enough water to make a thin batter. The consistency of the batter should be that of thin cream.
  • Heat a thick non-stick dosa pan and brush it with oil.
  • Take a ladleful of batter and pour it all over the pan from a height of about 15 cm from the pan to form a thin lacy disc, full of big holes.
  • The pan should be quite hot.
  • The batter will spread by itself and should not be spread with the ladle as for other dosas.
  • Allow the batter to cook and set.
  • Fold the pancake into a triangle and lift it off the pan.
  • Serve with sweet coconut milk or grated coconut mix.
  • For Sweet Coconut Milk:
  • Dissolve sugar or jaggery in coconut milk and add the nutmeg.
  • For Grated Coconut Mix:
  • Combine all the ingredients together.
