Ingredients

  • 200g - Butter
  • 200g - Icing Sugar
  • 5 - Light beaten eggs
  • 350g - Melted chocolate
  • 400g - Broken Walnuts
  • 80g - Flour
  • For Marzipan:
  • 225g - Sugar
  • 125g - Ground Almond
  • 40g - Icing Sugar
  • A pinch of Cream of tarter
  • 1 - Egg white
  • 5 tbsp - Water
  • Colour as required
  • How to Make American Walnut Brownies:

    1. For Marzipan:
    2. Put the sugar and the water in a heavy based saucepan and cook on a low heat until the sugar has dissolved.
    3. Add cream of tarter and bring to a boil until the sugar reaches 116 degrees C (240 degrees F) - soft ball stage.
    4. Remove from the heat and mix until it turns cloudy, then add ground almonds and vanilla extract.
    5. Add the egg white to the pan and return to a low heat and stir for a couple of minutes until smooth.
    6. Place the icing sugar on to a marble surface and pour over the mixture.
    7. Work in the icing sugar with a palate knife.
    8. Cover the mixture with plastic wrap until cooled.
    9. Roll out the marzipan in different colours and put into the desired shape moulds.
    10. For Brownie:
    11. Preheat the oven at 180 degrees C.
    12. Line a mould of 8 inch with a silver foil and place in a baking tray.
    13. Cream butter and sugar together with the help of the paddle or with hands till it is smooth and white in colour.
    14. Start adding eggs slowly and keep mixing
    15. Add the melted chocolate and mix it.
    16. Finally add the flour, walnuts and fold the mixture gently and pour the mixture to the lined mould.
    17. Bake it for 25 minutes at 180 degrees C.
    18. Cool on the cooling rack.
    19. For Garnishing:
    20. Spread some melted chocolate on a marble table and let it set.
    21. Take a steel scrapper and scrape the chocolate and put on the top of the brownie.
    22. Put one or two marzipan fruits to give colour to the dessert.
