Ingredients

  • 1/4 kg - Spinach
  • 2 onions, chopped finely
  • 4 hard-boiled eggs, peeled
  • 1 egg, beaten
  • 1 cup - breadcrumbs
  • 1 tbsp - seasoned flour
  • Oil for frying
  • Salt and pepper to taste

How to Make Ande Palakwale

  • Chop spinach finely and cook in enough water till tender.
  • Heat 1 tbsp - oil and fry the onions till golden brown.
  • Season with salt and pepper.
  • Add spinach puree. Cook till thick.
  • Roll the eggs in seasoned flour, coat with beaten egg and breadcrumbs.
  • Fry in hot oil until golden brown in colour.
  • Cut each egg into four.
  • Serve the spinach mixture, garnished with egg-quarters.
