Andhra style chicken fry is a popular chicken dish made in Andhra style. The dish holds huge popularity in the local areas of Andhra Pradesh and is relished as a side dish.

The non vegetarian chicken dish is made by deep frying of the chicken pieces which are then cooked with gravy and spices. The garam masala and chicken tikka masala are the major flavor contributors in this recipe. The chicken is marinated with spices to release the maximum flavor.

  • Chicken - 1 kg (big pieces)
  • Ginger-garlic paste - 3 tsp
  • Onions - 2 big
  • Tomatoes - 2
  • Lemon - 1
  • Green chillies - 6
  • Garam Masala - 1 tsp
  • Coriander powder - 2 tsp
  • Cumin powder - 1 tsp
  • Chicken tikka masala - 3 tsp
  • Pepper powder - 1 tsp
  • Red Chilli powder - 1 tsp
  • Oil - 5 tbsp
  • Salt - as per taste
  • How to Make Andhra Style Chicken Fry:

    1. Wash chicken and keep aside.
    2. Grind coarsely onions, tomatoes and green chillies.
    3. In a bowl add ginger-garlic, garam masala, lemon and all other powders.
    4. Then add the grinded onions and tomatoes with chilly.
    5. Add 2 tsp of oil and mix well.
    6. Let it marinate for minimum of 30 minutes.
    7. Heat a pan and add the marinated content in it and let it cook for 30 minutes on a medium heat till the chicken is well cooked and the water of the gravy dries up.
    8. Separate the chicken pieces from the gravy in the pan.
    9. Heat oil in another pan.
    10. Take out just the chicken pieces without gravy and fry till golden brown.
    11. Don't over fry (5 minutes or so is enough).
    12. Take out the chicken from oil.
    13. Lastly fry the gravy in the same oil for 5 minutes.
    14. Add pepper powder.
    15. Now add the fried chicken pieces into it and mix well.
    16. Serve hot.
