Ingredients

  • 4 - sheep's brains or 1 calf brain
  • 1 tsp - pepper powder
  • 1/2 tsp - salt
  • 2 tbsp - breadcrumbs
  • 1 tsp - chopped Mint or 1/2 tsp dry Mint
  • 2 slices bread soaked in water and squeezed dry
  • 1 - Egg (the white and the yolk to be beaten separately)
  • 2 tbsp - oil
  • How to Make Anglo- Indian Brain Cutlets:

    1. Wash the Brains well and remove the skin.
    2. Boil with a little water in a pan for 3 minutes.
    3. Drain and keep aside to cool.
    4. When quite cold, break into small pieces and mix with the salt, pepper, mint, soaked bread and the egg yolk.
    5. Divide and shape into cutlets.
    6. Dip each cutlet in the egg whites and coat with breadcrumbs on both sides.
    7. Heat the oil on a flat pan and shallow fry the cutlets on low heat till brown on both sides.
