  • 2 cups - chopped mixed vegetables such as beans, carrots, peas, cabbage, cauliflower
  • 1 - onion, chopped
  • 2 tbsp - butter
  • 1 tbsp - plain flour
  • 1/2 cup - milk
  • 6 cups - water
  • Salt and pepper to taste.

How to Make Anglo-Indian Cream Of Vegetable Soup

  • Boil the vegetables in water on medium heat for about 6 mins or till tender.
  • Heat butter in a pan and saute the onions till transparent.
  • Add the flour and milk. Stir well.
  • Now add the vegetables and water.
  • Mix well and simmer on medium heat for about 5 or 6 mins.
  • Season with salt and pepper.
  • Serve hot with croutons.
