Ingredients

  • 1 cup - moth beans
  • 1 - small cucumber, finely chopped
  • 1 - large tomato, finely chopped
  • 1 - small onion, finely chopped
  • 1 - green chilli, finely chopped
  • 2 tsp - chat masala
  • 1/4 tsp - Red Chilli powder
  • 1/4 tsp - black pepper powder
  • 2 tbsp - Lemon juice
  • 1 pinch - Turmeric
  • 1 tbsp - vegetable or Olive oil
  • 1/2 tsp - Cumin seeds
  • Salt - to taste
  • For Garnish:
  • 2 - green Onion
  • 1 tbsp - chopped Coriander leaves

How to Make Ankurit Moth Salad

  • Soak moth beans for 5-6 hours, then put it in a sieve overnight in a warm place.
  • Now take a heavy based pan, heat oil in it, put cumin seeds, when it starts to splutter put turmeric, moth and salt.
  • Pour 1/4 cup water in it, cover it and let it simmer for 4-5 minutes.
  • Open it, dry it and let it cool.
  • Now mix all ingredients softly with your hands.
  • Garnish it with green onions and coriander.
  • Serve as a side dish or as a snack in the evening.
