Ingredients

  • apples - 2 (350 gm approx)
  • golden raisins - 1/2 cup
  • oil - 1/4 cup
  • onion 1, medium size
  • garlic - 6 to 8 flakes
  • cinnamon - 1 stick
  • lemon grass - 1 piece, 5 cm long
  • chilli powder - one and a half tsp
  • curry powder - one and a half tsp
  • tomato puree - 2 tbsp
  • water - 1/4 cup
  • coconut milk - 1/2 cup
  • salt to taste

How to Make Apple and Raisin Curry

  • Peel and core apples.
  • Cut into 2 cm cubes.
  • Grind onion and garlic to a paste with oil.
  • Heat a non-stick fry pan and fry the ground paste till light brown.
  • Add chilli powder, curry powder, lemon grass and cinnamon and fry 1 minute.
  • Add tomato puree, water, apples and raisin.
  • Add salt to taste.
  • Cover and cook on low flame till apples are slightly soft.
  • Add coconut milk and cook for 2 more minutes.
  • Serve hot with steamed rice.
