Ingredients

  • 1/2 cup - vegetable oil
  • 2 tbsp - all-purpose flour
  • 1 cup - canned or cooked pumpkin
  • 1/2 tsp - salt
  • 2 cups - sugar
  • 1/2 tsp - ground cinnamon
  • 1 tsp - baking soda
  • 1/4 cup - sugar
  • 2 cups - finely chopped peeled apples
  • 4 tsp - cold butter
  • 2.5 cups - all-purpose flour
  • 2 eggs

How to Make Apple Pumpkin Muffins

  • In a bowl, add sugar, baking soda, flour and salt.
  • In another bowl, combine the eggs, pumpkin and oil and butter.
  • Add into dry ingredients just until moistened.
  • Fold in apples.
  • Fill paper-lined muffin cups two-thirds full.
  • Bake at 350 degrees for 35-40 minutes or until golden brown.
