  • 1 Egg
  • 1/2 cup - Orange juice
  • 1 cup - dried apricots, chopped
  • 1/4 cup - Brown sugar
  • 1 cup - Oat bran
  • 1/4 cup - Wheat germ
  • 3/4 cup - whole-wheat flour
  • 2 tsp - baking powder
  • 2 tbsp - Sunflower oil
  • margarine
  • How to Make Apricot Oat Muffins:

    1. Preheat oven to 400 degrees F.
    2. Grease a 12-cup muffin tin with margarine.
    3. In a small saucepan, heat orange juice until boiling.
    4. Mix in apricots and brown sugar.
    5. Remove saucepan from heat and cool apricot mixture slightly.
    6. In a medium bowl, combine oat bran, wheat germ, whole-wheat flour, and baking powder; set aside.
    7. In a mixing bowl, beat together sunflower oil, skim milk, and egg.
    8. Add dry ingredients and apricot-orange juice mixture to milk mixture, and mix until just moistened.
    9. Fill muffin tin and bake for 15 minutes or until golden brown and a cake tester comes out clean.
