Ingredients

  • asparagus - 1 bunch
  • moong dal - 1/2 cup
  • dry red chillies - 2 to 3
  • milk - 1/2 cup
  • coconut - 1/2 cup
  • jeera - 1 tsp
  • oil - 1 tsp
  • mustard - few
  • curry leaves - few
  • urad dal - 1 tsp
  • cilantro - few
  • salt as per taste

How to Make Asparagus palkootu

  • Cut the asparagus into tiny pieces.
  • Put the moong dal and the cut asparagus into a cooker with a little water. Pressure cook it for 3 whistles.
  • Grind the coconut, chilly, jeera with a little water.
  • Add the ground mixture to the cooked asparagus and also the milk.
  • Let it boil for a few minutes and add salt.
  • In a pan heat a little oil and add urad dal, mustard, curry leaves and asafoetida.
  • Once the mustard splutters and the urad dal is brown, add it to the asparagus.
  • Add finely chopped cilantro.
