Ingredients

  • 2 cups - chopped Asparagus spears
  • 1 - Onion chopped
  • 3 cups - water
  • 2 tsp - Butter
  • 1 cup - Milk
  • Salt to taste
  • 1/2 tsp - ground black pepper
  • 2 tbsp - grated cheese
  • 2 tbsp - Corn flour dissolved in 1/2 cup water
  • How to Make Asparagus Soup:

    1. Boil the asparagus and onion in 3 cups of water till tender.
    2. Remove from heat and blend to a smooth paste in a mixer or blender.
    3. Add the butter, milk, salt, pepper and corn flour/ corn starch.
    4. Cook over moderate heat for a few minutes until smooth and thick, stirring continuously.
    5. Add the grated cheese and simmer for 2 more minutes.
    6. Serve hot.
