Ingredients

  • 2 cups - chopped asparagus spears
  • 1 - onion chopped
  • 3 cups - water
  • 2 tsp - butter
  • 1 cup - milk
  • Salt to taste
  • 1/2 tsp - ground black pepper
  • 2 tbsp - grated cheese
  • 2 tbsp - corn flour dissolved in 1/2 cup water

How to Make Asparagus Soup

  • Boil the asparagus and onion in 3 cups of water till tender.
  • Remove from heat and blend to a smooth paste in a mixer or blender.
  • Add the butter, milk, salt, pepper and corn flour/ corn starch.
  • Cook over moderate heat for a few minutes until smooth and thick, stirring continuously.
  • Add the grated cheese and simmer for 2 more minutes.
  • Serve hot.
