Ingredients

  • 2 large aubergines finely chopped and soaked in salt water for 1/2 hour.
  • 1 cup - yogurt
  • 2 tsp - ginger - garlic paste
  • 1 tsp - garam masala
  • 1 tsp each of cumin powder, coriander powder, red chilli powder
  • 1 tsp - ghee
  • For gravy:
  • 1 tsp each of cumin powder, coriander powder, poppy seeds, ginger paste, black pepper powder
  • 2 tsp - grated coconut
  • 1 cup - cilantro
  • 2 - green chillies
  • 2-3 - garlic pods
  • Salt to taste
  • 2 tsp - ghee
  • 1 - large onion, chopped fine
  • 1 cup - green peas, boiled
  • 1/2 tsp - turmeric powder

How to Make Aubergine Curry - Gujarati style

  • Mix curd with the ginger- garlic paste, garam masala, cumin, coriander powder and red chilli powder.
  • Heat ghee and saute aubergines.
  • For the gravy, grind everything together except onion, peas and ghee.
  • Heat the ghee, saute the onions, ground ingredients till oil separates on the sides.
  • Add yogurt mixture, green peas and stir. Bring the mixture to a boil and finally add the fried aubergines and boil again.
  • Serve hot with chapattis.
