Ingredients

  • Aubergines - 2 or Baby aubergines - 8
  • Onions - 3 (sliced)
  • Tomatoes - 2 (sliced)
  • Coriander leaves
  • Poppy Seeds (khus khus) - 4 tbsp
  • Cinnamon (dalchini) - 3
  • Cloves - 3
  • Green Cardamoms - 2
  • Creamed Coconut - 2-3 tbsp
  • Yoghurt - 2 tbsp
  • Red Chilli powder - 2 tbsp
  • Turmeric powder - 1 tsp
  • Salt according to taste
  • Oil
  • Mustard Seeds - 1 tsp
  • How to Make Aubergine Masala Curry:

    1. Cut the aubergines into pieces of medium length and soak in salt water.
    2. Add oil in a frying pan and when the oil is hot, add mustard seeds.
    3. When they splutter, add sliced onions, turn the heat down to medium and fry until golden brown.
    4. Now add aubergines and turmeric and cover with a lid.
    5. Grind poppy seeds, cinnamon, cardamoms and cloves.
    6. Once the aubergines are soft, add tomatoes and fry for a while, then add creamed coconut and yoghurt, mix well and add the ground masala, chilli powder, salt and coriander leaves.
