Ingredients

  • 2 cups - Milk
  • 200 g - mushroom, sliced
  • 1 cup - potatoes, peeled and chopped
  • 2 - avocado, peeled and sliced
  • 2 tbsp - Butter
  • 1/2 cup - onion, chopped
  • 1/2 cup - Cream
  • 6 cups - water/stock
  • 2 tbsp - Mint leaves
  • salt and pepper to taste

How to Make Avocado and Mushroom Soup

  • Melt the butter in a skillet.
  • Add onion and fry till softened.
  • Add potato, avocado, mint and 4 cups of water or stock.
  • Let it simmer till the vegetables are cooked.
  • Cool and blend
  • Combine mushrooms with remaining water or stock.
  • Allow it to simmer for 2-3 minutes.
  • Add the blended mixture, salt, pepper and milk.
  • Heat thoroughly and serve garnished with cream.
