Ingredients

  • Eggplants - 4
  • Onions - 1
  • Green chillies - 3
  • Coconut grated - 1 cup
  • Ginger - 1inch piece
  • Dhania seeds - 1 tbsp
  • Khuskhus - 1 tbsp
  • Sesame - 1 tbsp
  • Cumin - 1/2 tsp
  • Dry red pepper - 3
  • Tamarind paste - 1/2 tsp
  • Salt to taste
  • Oil for seasoning
  • Curry leaves - a few.
  • How to Make Baghara Baingan:

    1. Cut the eggplant and saute in oil, adding salt to taste and keep it aside.
    2. Dry roast and grind to a smooth powder the coriander seeds, khus khus, sesame seeds, cumin and dry red pepper.
    3. Wet grind to a paste fresh coconut, onion, ginger piece.
    4. In a thick bottomed kadai, add oil and pour the wet masala, turmeric, green chillies and saute it until the oil leaves the sides.
    5. Add the dry masala and tamarind paste with 1 cup of water.
    6. When this starts boiling, add the egg plant. Taste and adjust seasonings.
    7. Garnish it with curry leaves.
