How to Make

  • Cut the eggplant and saute in oil, adding salt to taste and keep it aside.
  • Dry roast and grind to a smooth powder the coriander seeds, khus khus, sesame seeds, cumin and dry red pepper.
  • Wet grind to a paste fresh coconut, onion, ginger piece.
  • In a thick bottomed kadai, add oil and pour the wet masala, turmeric, green chillies and saute it until the oil leaves the sides.
  • Add the dry masala and tamarind paste with 1 cup of water.
  • When this starts boiling, add the egg plant. Taste and adjust seasonings.
  • Garnish it with curry leaves.
