Ingredients

  • 1/2 kg brinjal/baingan
  • 1/2 kg Yoghurt
  • 1 cup - gram flour (besan)
  • 1 tbsp - ginger-garlic paste
  • 2-3 green chillies, finely chopped
  • 1 tsp - Turmeric powder
  • Salt to taste
  • 2 tsp - Sugar
  • 1 tsp - chaat masala
  • Oil for frying
  • For garnishing:
  • Roast slightly and pound to a coarse powder:
  • 1 tsp - Cumin seeds (jeera), 8-10 pepper whole, 1/4 tsp - mustard seeds, 1/4 tsp - Methi seeds.
  • Add to it: 1/2 tsp - Red Chilli powder (coarse) and salt to taste. 100 gms - tomatoes, finely chopped
  • 100 gms - capsicum, finely chopped
  • 2 potatoes, sliced and fried

How to Make Baigan dahi vada

  • To prepare the brinjal: Peel and cut into fine round slices.
  • Make batter with besan, ginger-garlic paste, green chillies, turmeric and salt.
  • Dip the brinjal slices in this and fry in hot oil till deep brown.
  • Remove and soak in water.
  • Squeeze dry and arrange in a pie dish.
  • Beat yoghurt well, adding in.5 tsp salt, 2 tsps. sugar and 1 tsp - chaat masala.
  • Pour this over the brinjal completely spreading it out.
  • Sprinkle the roasted powdered masala.
  • Spread the tomatoes, capsicum and fried potatoes and serve at room temperature.
