How to Make Baingan Achari

  • Put the oil in a microwave-safe dish. Microwave at 100% power for 2 minutes.
  • Add onion and fennel seeds. Continue to microwave at the same level for 3 minutes.
  • Add the powdered spices and ginger-garlic paste. Stir and cook another 3 minutes.
  • Pour in the tomato puree and very little salt.
  • Cover with a paper napkin.
  • Cook at 100% power for 8 mins. Stir twice till the oil starts to separate at the edges.
  • Gently add the fried brinjals and a few tbsps water to make a thick gravy.
  • Cover and microwave at 70% power for 3 minutes. Let stand 3-4 minutes before serving.
