Ingredients

  • 400 g - small Brinjals (sliced, salted, drained and deep fried)
  • 3 big Tomatoes (made into a puree)
  • 2 finely chopped Green chillies (or as per taste)
  • ½ tbsp - fennel (sauf) seeds
  • ½ tbsp - Onion seeds (kalonji)
  • a pinch Turmeric powder
  • ½ tbsp - coriander powder
  • 1 tsp - Red Chilli powder
  • 1 tsp - Ginger Garlic paste
  • 2 tbsp - oil
  • salt to taste
  • How to Make Baingan Achari:

    1. Put the oil in a microwave-safe dish. Microwave at 100% power for 2 minutes.
    2. Add onion and fennel seeds. Continue to microwave at the same level for 3 minutes.
    3. Add the powdered spices and ginger-garlic paste. Stir and cook another 3 minutes.
    4. Pour in the tomato puree and very little salt.
    5. Cover with a paper napkin.
    6. Cook at 100% power for 8 mins. Stir twice till the oil starts to separate at the edges.
    7. Gently add the fried brinjals and a few tbsps water to make a thick gravy.
    8. Cover and microwave at 70% power for 3 minutes. Let stand 3-4 minutes before serving.
