Ingredients

  • 100 gms - brinjal (de-skinned, roasted and finely chopped)
  • 1 tbsp - chopped onions
  • 1 tbsp - dahi
  • 1 tbsp - ginger-garlic paste
  • 1 pinch - cumin
  • 1 pinch - rai (mustard seed)
  • 1tbsp - chopped coriander
  • 1tbsp - red chilli
  • 1 pinch - haldi powder
  • 1 pinch - dhania/coriander powder
  • 1 pinch - salt for taste
  • 1 pinch - chat masala
  • 1 tbsp - fresh tomato ketchup
  • 1/2 tbsp - oil

How to Make Baingan Bartha Roll

  • Heat oil in a pan, add rai and cumin and wait till they crackle.
  • Add chopped onions and saute till it becomes brown.
  • Add ginger-garlic and dahi.
  • Stir for 2 mins.
  • Now add rest dry masalas including salt and tomato ketchup.
  • Mix the ingredients and ensure the masala is cooked.
  • Add the roasted chopped brinjal and mix well.
  • Cook for 2- 3 mins more.
  • Add coriander to garnish.
  • Place the sabji on paratha and roll.
