Ingredients

  • 1 - large eggplant
  • 1 - Egg
  • 1/4 cup - Milk
  • 1.5 cup - Chick pea flour
  • 2 tbsp - Cilantro, chopped
  • 1/2 cup - Whole wheat flour
  • 1 cup - Water,
  • 1/2 tbsp - Cumin, preferably ground
  • 1/4 tbsp - Ginger freshly cut
  • 1 tsp - chilli powder
  • Salt to taste
  • 1 tsp - black pepper powder

How to Make Baingan ka Fritters

  • Add milk to the egg and beat it well.
  • Now mix the beaten egg, the chick pea flour and the whole wheat flour, cumin, ginger and enough water to make a thick batter.
  • Add the red chilli powder, cilantro, salt and black pepper powder to it. Mix well.
  • Now cut the eggplant vertically into 1/4 inch thin slices.
  • Soak these slices in the batter for 10 mins.
  • Heat the oil in the pan till its really hot. Deep fry the fritters until light brown.
  • Drain and serve hot.
