Ingredients

  • 2 - Big Potatoes
  • 1/2 cup - Sweet Corn
  • 1/2 cup - Capsicum, finely chopped
  • 2 tsp - Cheddar cheese
  • 2 tsp - Parmesan cheese
  • 2 tsp - Tomato ketchup
  • Mozzarella cheese
  • Black pepper powder
  • Salt to taste
  • Sour Cream

How to Make Bake Potatoes

  • Preheat the oven to 180 degrees C.
  • Poke holes in the potatoes with a fork and bake them for 1/2 hour.
  • Remove from the oven and allow them to cool.
  • Mix together sweet corn, capsicum, cheddar cheese, parmesan cheese, salt, black pepper, ketchup and sour cream.
  • Cut the potatoes into 2 halves and scoop out the centre.
  • Stuff the potatoes with the mixture, sprinkle some mozzarella cheese.
  • Bake the potatoes till the cheese melts.
  • Serve hot.
