Ingredients

  • 2 - Big Potatoes
  • 1/2 cup - Sweet Corn
  • 1/2 cup - Capsicum, finely chopped
  • 2 tsp - Cheddar cheese
  • 2 tsp - Parmesan cheese
  • 2 tsp - Tomato ketchup
  • Mozzarella cheese
  • Black pepper powder
  • Salt to taste
  • Sour Cream
  • How to Make Bake Potatoes:

    1. Preheat the oven to 180 degrees C.
    2. Poke holes in the potatoes with a fork and bake them for 1/2 hour.
    3. Remove from the oven and allow them to cool.
    4. Mix together sweet corn, capsicum, cheddar cheese, parmesan cheese, salt, black pepper, ketchup and sour cream.
    5. Cut the potatoes into 2 halves and scoop out the centre.
    6. Stuff the potatoes with the mixture, sprinkle some mozzarella cheese.
    7. Bake the potatoes till the cheese melts.
    8. Serve hot.
