  • 4 - eggs
  • 2 cups - spinach, chopped fine
  • 2 - large potatoes, boiled
  • 1/2 cup - cheddar cheese
  • 1/2 cup - Milk
  • 1 tsp - black pepper
  • 1 tbsp - Olive oil
  • 1 tsp - mustard paste
  • For Tomato sauce:
  • 4-5 - large tomatoes, chopped
  • 1/2 tsp - dried basil, oregano, Nutmeg
  • 1 tsp - black pepper
  • 1 tsp - salt
  • 1 tbsp - Olive oil
  • How to Make Baked Eggs in Spinach and Potato Mash:

    1. Mash the boiled potatoes and add salt and mustard paste.
    2. Pour in the milk and mash gently.
    3. Saute chopped spinach and keep aside.
    4. For the tomato sauce, heat olive oil in a pan and add chopped tomatoes and cook till soft.
    5. Add the herbs, spices and water and cook covered for 10-15 min.
    6. When this cools, grind into a fine paste.
    7. Grease a dish and spread the mashed potatoes evenly.
    8. Spread some cheese on top and then add sauteed spinach.
    9. Spread tomato sauce evenly over the spinach layer.
    10. Make four holes in the dish by swirling a fork or spoon.
    11. Pour in the eggs in these holes and sprinkle cheese on rest of the area.
    12. Immediately, place into the preheated oven at 180 degree C for 10-12 minutes.
    13. Cut the dish into squares and serve.
