  • 4 large tomatoes
  • 2 tsp - butter
  • 4 eggs
  • 2 tbsp - grated cheese
  • 2 tbsp - chopped coriander leaves
  • Salt and pepper to taste

How to Make Baked Eggs in Tomato Shells

  • Slice off the tops of the tomatoes and scoop out the pulp.
  • Salt the tomato shells lightly and turn upside down to drain for 10 mins.
  • Arrange on a well-buttered baking dish and place 0.5 tsp. butter in each.
  • Bake in a moderate oven at 177 degrees C for 5 mins.
  • Break 1 egg into each shell and return to the oven to bake until the egg whites have set.
  • Sprinkle each with salt, pepper and cheese.
  • Place under the broiler until the cheese has melted and is bubbly.
  • Garnish with coriander leaves and serve immediately with mashed potatoes and sausages.
  • Makes 2 servings.
