Ingredients

  • 100 g - plain biscuits such as Marie biscuits
  • 50 g - Butter
  • 500 g - cottage cheese/low-fat Cream cheese
  • 1 cup - Milk
  • 200 g - Sugar
  • 3 eggs
  • 1 tbsp - Lemon rind
  • 2 tbsp - Lemon juice

How to Make Baked Lemon Cheesecake

  • Melt the butter in a saucepan.
  • Crush the biscuits with a rolling pin or in a blender till they are of the consistency of fine breadcrumbs. Then, mix them well with the melted butter.
  • Now transfer this mixture to a non-stick cake tin with a removable base.
  • Press down well to form the base.
  • Blend the cottage cheese/cream cheese, milk and sugar together till smooth.
  • Add the eggs, lemon rind and lemon juice and blend till smooth.
  • Pour the mixture over the biscuit base.
  • Bake in a preheated oven for 35 to 40 minutes till the top is firm to touch.
  • Cool and then turn out on to plate.
