Ingredients

  • Palak, shredded - 1 bunch
  • Onion, finely shredded - 2 medium
  • Tomato chopped - 2 medium
  • Slit green chilli - 3
  • Garlic, chopped - 3
  • Red chilli powder - 1 tsp
  • Coriander, cumin powder - 1 tsp
  • Garam masala - 1/2 tsp
  • Sugar - 1/2 tsp
  • Sliced tomatoes and grated cheese for garnishing
  • For Rice
  • Basmati rice - 1 cup
  • Cardamom - 2
  • Cloves - 3
  • Cinnamon - 1 inch piece
  • Bay leaf - 1
  • Ghee - 1 tbsp

How to Make Baked Palak Pulao

  • Wash the rice and drain
  • Heat ghee in a cooker, add bay leaves, cinnamon, cloves and cardamom and fry.
  • Add the drained rice and fry for a while
  • Add 2 cups water and pressure cook
  • Keep the cooked rice aside
  • In a kadai, heat 2 tsp, oil fry the onions till translucent, add garlic and the tomatoes and fry till the tomatoes become mushy
  • Add the shredded palak and keep frying till the mixture blends well and cooked
  • Add the dry spices and mix well.
  • In a greased baking dish, spread half the cooked rice at the bottom.
  • Top it with half palak mixture
  • Add the other half of cooked rice
  • Top with the remaining palak mixture.
  • Garnish with sliced tomatoes and grated cheese, cover with an aluminium foil and bake for 15 / 20 mins at medium heat.
  • Serve hot.
