Ingredients

  • 2 cups - Rice (cooked)
  • 1 cup - Tomato puree
  • 1 cup - Curd
  • 2 cups - finely chopped vegetables (boiled carrot, onion, capsicum, boiled corn, Mushroom and pea)
  • 2 tsp - Red Chilli sauce
  • 3-4 - Garlic Cloves (chopped finely)
  • 1 tbsp - vegetable oil
  • Oregano and chilli flakes for garnishing
  • salt to taste
  • black pepper to taste
  • 2-3 cubes - cheese (grated)
  • How to Make Baked Spanish Rice:

    1. Heat oil, add the garlic cloves and vegetables and saute until tender.
    2. Add curd and simmer for 5 mins.
    3. Add chilli sauce and tomato puree and let the ingredients simmer for another 5 mins.
    4. Add the cooked rice and mix well.
    5. The preparation should not be dry; add more puree if required.
    6. Add salt and pepper to taste, then oregano.
    7. Put on a baking tray, top with lots of grated cheese and chilli flakes and bake until the cheese melts. Serve hot.
