  • Asafoetida - 1 tsp
  • Roasted gram/groundnuts - 2 tsp (Optional)
  • Curry leaves - A few (Optional)
  • Oil (If you plan to fry instead of bake)
  • How to Make Baked thattai:

    1. Wash rice well and drain in a colander for 30 minutes.
    2. Grind it to a very fine powder.
    3. Dry roast rice flour for a couple of minutes till the grains seem separate.
    4. Dry roast urad dal till it becomes fragrant. No need to let it turn red/brown.
    5. Grind it into a fine powder once cool.
    6. Mix all dry ingredients and rub butter into it
    7. Add enough water (Roughly 1 cup) to make a soft pliable dough.
    8. Preheat oven to 180 degrees C or heat oil at this stage if you plan to fry
    9. Pinch out 1 tbsp-sized balls from the dough.
    10. Flatten on your greased palm (2-3 inch in diameter) and carefully place on baking tray or drop into hot oil and deep fry.
    11. Bake in the preheated oven for 15 minutes. Then flip over very carefully and bake for another 15 minutes
