Ingredients

  • 3 - Carrots, scraped and cut into thick wedges
  • 1 cup - Cauliflower florets
  • 3 - Potatoes, peeled and cut into wedges
  • 1 cup - Green peas
  • 2 - Capsicums, deseeded and cut into large pieces.
  • 1 cup - Sweet corn
  • 2 - Onions, chopped roughly
  • 1 tbsp - Vinegar
  • 1 tbsp - Lime juice
  • 1 tbsp - Sugar
  • 2 tbsp - Ground pepper/pepper powder
  • 2 tbsp - Grated cheese
  • 2 tbsp - Oil
  • Salt to taste
  • 100 g - Cottage cheese/ paneer cut into pieces

How to Make Baked Vegetable Platter

  • Boil the carrots, cauliflower, peas, corn and potatoes in a little water for a few minutes.
  • Drain and then mix all the above ingredients together in a bowl.
  • Transfer to a baking dish.
  • Bake in a moderate oven for about 45 minutes till the vegetables are brown and tender.
