Ingredients

  • Tamarind - 1 Lemon size
  • Oil - 2 tbsp
  • Mustard Seeds - 1 tsp
  • Black gram dal - 2 tsp
  • Garlic - 8 cloves, peeled and slightly crushed
  • Onion - 1/2 cup, chopped
  • Chilli powder - 1 tsp
  • Sambar powder - 2 tsp
  • Mushrooms - 200 gm, quartered
  • Fresh or canned Bamboo shoots - 1 cup, cut into 4 cm pieces
  • Salt to taste

How to Make Bamboo Shoot and Mushroom Khara Kuzhumbu

  • Soak tamarind in 2 cups of water and extract the juice.
  • Heat the oil in a kadai. Add mustard.
  • When it splutters, add the dal.
  • When the dal begins to brown, add garlic and fry well till fragrant.
  • Add onion and fry till they are golden brown.
  • Add chilli and sambar powders and the tamarind extract.
  • Simmer without covering for five minutes.
  • Add mushrooms, bamboo shoots and salt.
  • Simmer covered for five more minutes.
  • Serve.
