Ingredients

  • 1 cup - whole-wheat pastry flour
  • 1/3 cup - stone-ground yellow Corn meal
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • 1/4 tsp - salt
  • 1 tsp - ground Cardamom
  • Wet:
  • 5 tbsp - Canola Oil
  • 2/3 cup - Sugar
  • 2 tbsp - Molasses
  • 2 tbsp - Flax seed powder, mixed with 4 tbsp water
  • 1/3 cup - Apple sauce
  • 2 - small ripe bananas, mashed well
  • How to Make Banana Cornbread:

    1. Mix all the dry ingredients together.
    2. Place the wet ingredients in a bowl and beat on medium speed with an electric mixer until well incorporated.
    3. Add the flour mixture gradually, stirring until it is well mixed in.
    4. Add 1/2 cup pecans, toasted lightly.
    5. Pour into an oiled loaf pan and bake for about 55 minutes at 250 degrees until the top is a rich brown.
    6. Remove to a rack and cool.
