Ingredients

  • 1 cup - whole-wheat pastry flour
  • 1/3 cup - stone-ground yellow corn meal
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • 1/4 tsp - salt
  • 1 tsp - ground cardamom
  • Wet:
  • 5 tbsp - canola oil
  • 2/3 cup - sugar
  • 2 tbsp - molasses
  • 2 tbsp - flax seed powder, mixed with 4 tbsp water
  • 1/3 cup - apple sauce
  • 2 - small ripe bananas, mashed well

How to Make Banana Cornbread

  • Mix all the dry ingredients together.
  • Place the wet ingredients in a bowl and beat on medium speed with an electric mixer until well incorporated.
  • Add the flour mixture gradually, stirring until it is well mixed in.
  • Add 1/2 cup pecans, toasted lightly.
  • Pour into an oiled loaf pan and bake for about 55 minutes at 250 degrees until the top is a rich brown.
  • Remove to a rack and cool.
