Ingredients

  • 110g - Rice flour
  • 225g - tempura flour
  • 110 m - grated coconut, fresh or dried
  • 225 ml - Coconut Milk
  • 125 ml - Sugar
  • 25 ml - sesame seeds
  • 1 - ice Cream
  • 4 - bananas, cut in half
  • oil for deep frying
  • 5 ml - salt
  • How to Make Banana Fritters with Ice Cream:

    1. Mix all ingredients (except ice-cream and banana) together to form a batter.
    2. Heat the oil in a large, heavy based saucepan. Dip the banana in flour and then the batter.
    3. Deep fry until golden brown.
    4. Remove from oil and drain on absorbent kitchen paper.
    5. Serve with ice cream.
