Ingredients

  • 2 cups - packed brown sugar
  • 1 cup - mashed banana
  • 2 - egg
  • 1 tsp - vanilla extract
  • 2 tbsp - vegetable oil (optional)
  • 3 cups - all purpose flour
  • 2 tsp - baking soda
  • 1 tsp - salt
  • 1.5 tsp - ground cinnamon
  • 1/2 tsp - ground allspice
  • 1 tbsp - ground cardamom
  • 1/2 tsp - ground clove
  • 2 cups - dark beer
  • 1.5 cups - walnut (chopped)
  • 2 tbsp - all purpose flour
  • 2 cups - dates (pitted and chopped)
  • 2 tbsp - fresh ginger root (minced)

How to Make Banana Nut Ginger Bread

  • Preheat an oven to 175 degrees Celsius.
  • Lightly grease two 9 by 5 inch loaf pans.
  • In a large bowl, cream the brown sugar, banana, eggs and vanilla extract.
  • For a moister bread, add oil.
  • In a separate bowl, sift together 3 cups of flour, baking soda, salt, cinnamon, allspice, cardamom and cloves.
  • Blend the flour mixture and beer into the creamed mixture.
  • Add the walnuts and remaining 2 tbsp of flour.
  • Stir in the dates and ginger and blend the mixture well.
  • Pour into the greased loaf pans.
  • Bake at 175 degrees for an hour or until a toothpick inserted into the preparation emerges dry and clean.
