  • 2 cups - parboiled (Idli) Rice
  • 2 cups - Barley
  • 1 cup - whole Urad Dal
  • 1/2 tsp - Fenugreek seeds
  • Salt
  • How to Make Barley idli:

    1. Wash and soak the rice along with barley for 3 to 4 hrs.
    2. Wash and soak the urad dal for 3 to 4 hrs.
    3. First, grind urad dal along with fenugreek.
    4. While grinding, keep sprinkling water at regular intervals.
    5. The consistency of the batter should be very soft and fluffy.
    6. Remove the batter from the grinder and keep it aside.
    7. Now, grind the rice with barley to a smooth paste.
    8. Mix both the batters along with salt. Cover and keep aside overnight to ferment for 10-12 hrs.
    9. Next day, the batter would have raised 2 inches high with tiny bubbles.
    10. Pour a ladleful of batter in idli tray and steam cook for 10 -15 mins.
    11. Soft and healthy barley idli is ready to be served.
    12. Serve hot with chutney of your choice or with sambar and enjoy.
