  • 1 cup - pearl barley
  • 6 to 8 cups - water
  • Grated rind of 1 lemon
  • 1/4 cup - sugar
  • Juice of 2 lemons

How to Make Barley Water

  • Wash the barley in plenty of water, then add it to a heavy saucepan with the water.
  • Bring to a boil, reduce heat and simmer gently for 20 to 30 mins, skimming off scum from time to time.
  • Remove the pan from the heat and add lemon rind, sugar and stir well.
  • Let it cool. Strain and add the lemon juice.
  • Use more sugar if necessary.
