Ingredients

  • Black gram - 1.5 cup
  • Kidney beans (rajma) - 1/2 cup
  • Ghee - 2 tsp
  • Cinnamon - 3 pieces
  • Cloves - 3
  • Garlic - 8 flakes, chopped
  • Ginger - 2 cm, chopped
  • Onion - 1 small, chopped
  • Tomato - 1/2 cup, chopped
  • Chilli powder - 1.5 tsp
  • Turmeric powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Salt - to taste
  • Sugar - 1 tsp
  • Butter - 1/2 cup
  • Malai or fresh Cream - 1/2 cup
  • Garam Masala - 1 tsp
  • How to Make Basic Dal Makhni:

    1. Soak the rajma overnight.
    2. Soak the urad for 1 hour
    3. Heat ghee in a pressure cooker and saute the cloves, cinnamon, garlic, ginger and onion until pink
    4. Now add the chilli, turmeric and cumin powders and saute
    5. Then add the tomato and cook until it softens
    6. Drain the rajma and urad and add to the mix in the pressure cooker
    7. Add 3-4 cups of water and pressure cook for 25-30 mins
    8. Let it stand for 10 mins
    9. Now mash the dal lightly
    10. Add butter, sugar and salt
    11. Add water if required
    12. Simmer for 5 minutes
    13. Sprinkle the garam masala and garnish with malai.
