Ingredients

  • 1 kg - ripe tomatoes
  • 2 - large onions
  • 4 fat cloves - garlic
  • 2 tbsp - oil
  • 2 to 3 tbsp - fresh basil leaves
  • 2 tbsp - red wine vinegar
  • 1 tsp - instant coffee
  • 2 tsp - soft dark brown sugar
  • salt and pepper to taste

How to Make Basic Tomato Sauce

  • Chop the tomatoes. Peel and chop the onions and the garlic. Put the oil to heat in a heavy pan over a low heat.
  • Cook the onions and garlic in it until soft but not brown.
  • Add the tomatoes and cook till soft.
  • Add the basil, vinegar, coffee powder and sugar. Stir well. Season with salt and pepper.
  • Sieve or blend.
