Ingredients

  • Bean sprouts - 2-3 cups
  • Tur dal - 1-2 cups
  • Red Chilli - 2-3
  • Turmeric - 1/2 tsp
  • Hing - a pinch
  • Salt to taste
  • For seasoning: Mustard - 1 tsp
  • Urad Dal - 1 tsp
  • Curry leaves
  • How to Make Bean Sprout Paruppu Usili:

    1. Cut the bean sprouts and cook with a little water in a microwave for 7 to 10 minutes.
    2. Soak the tur dal for an hour or so and coarsely grind with the red chillies, turmeric, salt and hing.
    3. Pressure-cook the dal mixture in a cooker.
    4. Let it cool and grind again to give the mixture powder form.
    5. Heat oil in a kadhai and add urad dal, mustard and curry leaves. On spluttering, add the dal mixture and mix evenly.
    6. Add the cooked bean sprouts and mix well.
    7. Let it sit for a while until the bottom starts turning light brown. Now serve.
