How to Make Bean Sprout Paruppu Usili

  • Cut the bean sprouts and cook with a little water in a microwave for 7 to 10 minutes.
  • Soak the tur dal for an hour or so and coarsely grind with the red chillies, turmeric, salt and hing.
  • Pressure-cook the dal mixture in a cooker.
  • Let it cool and grind again to give the mixture powder form.
  • Heat oil in a kadhai and add urad dal, mustard and curry leaves. On spluttering, add the dal mixture and mix evenly.
  • Add the cooked bean sprouts and mix well.
  • Let it sit for a while until the bottom starts turning light brown. Now serve.
