Ingredients

  • 1/2 kg - string beans, chopped finely
  • 3 - carrots, peeled and chopped into small pieces
  • 3 - green chillies, chopped
  • 1 - onion, sliced
  • 1 tbsp - chopped Garlic
  • 1/4 tsp - Mustard Seeds
  • 8 - Curry leaves
  • 1/2 cup - grated Coconut (optional)
  • 1 tbsp - oil
  • Salt to taste
  • How to Make Beans And Carrot Foogath:

    1. Parboil the beans and carrots in a little water for about 5 or 6 minutes.
    2. Drain and keep aside.
    3. Heat oil in a pan and add the mustard, garlic and curry leaves.
    4. When the mustard starts spluttering, add the chopped onion and green chillies and fry till the onions turn slightly brown.
    5. Add the parboiled beans and carrots and salt and mix well.
    6. Mix in the grated coconut.
    7. Cover and cook for a few more minutes then turn off the heat.
