Ingredients

  • 1/2 kg - string beans, chopped finely
  • 3 - carrots, peeled and chopped into small pieces
  • 3 - green chillies, chopped
  • 1 - onion, sliced
  • 1 tbsp - chopped Garlic
  • 1/4 tsp - Mustard Seeds
  • 8 - Curry leaves
  • 1/2 cup - grated Coconut (optional)
  • 1 tbsp - oil
  • Salt to taste

How to Make Beans And Carrot Foogath

  • Parboil the beans and carrots in a little water for about 5 or 6 minutes.
  • Drain and keep aside.
  • Heat oil in a pan and add the mustard, garlic and curry leaves.
  • When the mustard starts spluttering, add the chopped onion and green chillies and fry till the onions turn slightly brown.
  • Add the parboiled beans and carrots and salt and mix well.
  • Mix in the grated coconut.
  • Cover and cook for a few more minutes then turn off the heat.
