Ingredients

  • 1 cup - Rice flour
  • 1 cup - Wheat flour
  • 4 eggs
  • 2 cups - Coconut Milk
  • 2 tbsp - Butter
  • 3 tbsp - Sugar
  • 1 tsp - vanilla essence
  • 2 tsp - sliced Almonds
  • How to Make Bebinca:

    1. Mix the rice flour and the wheat flour together.
    2. Cream the butter and sugar together.
    3. Add the eggs and coconut milk and mix well.
    4. Slowly add the rice and wheat flour and vanilla essence and mix well to smooth thick batter.
    5. Pour into a greased baking dish or tin and sprinkle the sliced almonds on the top.
    6. Bake in a hot oven for about 40 minutes till the top gets brown.
    7. Remove and let it cool.
    8. When cold, remove from the tin cut into slices.
