Bengali Style Pulao is a delicious rice recipe popularly made by Bengalis. People in Bengal and especially Kolkata swear by this recipe and make it on special occasions.

You can learn how to make it at home using our recipe guide. This Indian vegetarian recipe involves simple boiling technique. It is best to use long grain basmati rice for the recipe.

Boil the pre-soaked rice with some spices like nutmeg, saffron, bay leaf and garam masala. Spoonful of ghee will add the amazing aroma to the rice. You can also add rose essence to make them more aromatic. Finally, cook them until done.


  • 2 cups - basmati Rice
  • 1/2 tsp - Nutmeg powder
  • 1/4 tsp - Garam Masala powder
  • pinch of Saffron soaked in 1/4 cup of Milk
  • few drops of rose essence
  • 4 tbsp - Ghee
  • 2 - Bay Leaves
  • dry fruits soaked in water
  • 1/2 tsp - salt
  • 2 tbsp - Sugar
  • 2 - 3 dry Red Chillies
  • How to Make Bengali Style Pulao:

    1. Heat ghee, add bay leaves. When they splutter, add rice followed by dry red chillies and cook for 2 - 3 mins.
    2. Add garam masala, nutmeg powder, saffron, dry fruits and add water.
    3. Follow with sugar and salt and let the rice boil.
    4. Cook until rice is done and no water is left. The water should get completely absorbed.
    5. Sprinkle essence.
    6. Serve hot.
