  • 2 cups - gram flour
  • 1 cup - Wheat flour
  • 1/2 cup - dry flour (to roll )
  • 1/2 cup - chopped Onion
  • 1 tsp - chopped Green chilli
  • A handful - chopped coriander
  • 2 tbsp - Butter or any oil
  • Salt to taste
  • 1 tsp - caravay seeds (ajwain)
  • 1 tsp - Garam Masala powder
  • 1 cup - water (use as needed)
  • How to Make Besan Paratha:

    1. Mix all the ingredients in a bowl and knead soft dough using appropriate quantity of water.
    2. Cover the bowl with a wet kitchen towel to avoid hardening.
    3. Heat a non-stick pan and spread some oil over it.
    4. Divide the dough into 5 equal parts.
    5. Roll the dough into about 3 inch diameter circles.
    6. Spread about 2 drops of oil and fold into two again.
    7. Roll the patty in dry whole-wheat flour.
    8. Press it a little and start rolling on a clean surface to about 6 inches in diameter.
    9. Place the paratha over the non-stick pan.
    10. When you see the colour change and the paratha will puff in different places.
    11. Turn the paratha over.
    12. The paratha should have golden-brown spots. Wait a few seconds and put about 1/2 tsp of oil and spread with a spatula.
    13. Flip the paratha and lightly press the puffed areas of the paratha with a spatula that will help paratha to puff up.
    14. Flip again and press with the spatula making sure the paratha is golden-brown on both sides.
    15. Serve hot with a knob of butter on top or any curry or with tea.
