Ingredients

  • 500 gms - small round brinjals
  • Oil for frying
  • 1/2 tsp - turmeric powder
  • 2 cm piece ginger
  • 1/2 tsp - sugar
  • Salt to taste
  • For grinding:
  • 1.5 tsp - coriander powder
  • 1 tsp - chilli powder
  • 2 green chillies

How to Make Bhaja Begun (Fried Brinjals)

  • Cut the brinjals into 1 cm. round slices.
  • Apply the ground masala on both sides and fry in oil to a golden brown.
  • Serve hot with a little mint chutney on top.
